How to store herbs
How to dry and store herbs properly so as to preserve their healing powers.When drying leaves or flowers, tie small bunches of herbs together and hang them upside down in a dry, well ventilated area such as large pantry. Enclose them in paper bags with holes so as to allow air to circulate. This will assist to keep excess dust off them. Ensure that the herbs are not crushed or squashed as we want to keep the herbs oils contained within the stem and leaves. The procedure to dry seeds is the same as that mentioned in the preceding paragraph. Hang the entire plant upside down in a bag with holes punched in it. The seeds will automatically fall to the bottom of the bag as the plant dries. To keep the herbs fresh, ensure they are stored in a air tight sealed container in a cool dark place. If properly stored they should retain their potency for between six months and a year. To store fresh basil in the short term, wrap the lower stems with a damp paper towel, place them in an unsealed plastic bag, and store in your fridges vegetable drawer. For longer term storage, it is suggested to stuff the basil leaves into your ice cube tray and top with water. When you want to use them you will have pre-measured chunks of basil to place into a soup or sauce.
