Grilled Shrimp Kabobs (kabab, kebap, kibob)
Ingredients to serve 4.
50ml or 3 tablespoon butter. ½ teaspoon garlic cloves minced or 2ml Garlic powder. 2 tablespoon or 30 ml finely chopped spring onion or shallots. 1/8 tablespoon or 0.50 ml cayenne pepper. 1 lb or 454g raw medium peeled shrimp or prawns. (with or without tails left intact). ¼ cup or 60 ml diced fresh mushrooms. 2 tablespoon or 30 ml diced red capsicum (or bell pepper). Lemon pepper sprinkle.
Instructions
Preheat gas barbecue to medium high. In a shallow foil pan on grill, add butter and let melt briefly without burning. Add garlic, spring onions and cayenne pepper, stir together and cook for 1 to 2 minutes until spring onions are soft. Add prawn, mushrooms and red capsicum. Sprinkle with lemon pepper and stir. Close lid and cook for 5 or 6 minutes until shrimp or prawns are pink and curled. Skewer cooked shrimp / prawns along with mushrooms and capsicum on wooden sticks. Serve with or without rice. When serving with rice, place kebabs over rice and pour left over pan juices over kebabs and rice.
