Burrito
Ingredients to serve 4 500 g (1lb) rump steak 1 teaspoon olive oil 1 onion, finely sliced 1 cinnamon stick 4 cloves of garlic 1 bay leaf 2 cups (16 fl oz) beef stock 8 x 20 cm (8 inch) tortillas Tomato Salsa, to serve.
Instructions Trim fat from steak and cut into 2 cm (¾ inch) cubes. Place oil and onion in frying pan and cook until golden brown. Add meat, cinnamon stick, garlic cloves, bay leaf and beef stock into frying pan. Increase heat to high so contents boil briefly, then reduce heat and simmer covered for 30 minutes or until meat is soft and liquid is almost absorbed. Remove and discard the cinnamon stick, garlic cloves and bay leaf. Shred the meat with two forks. It is now ready to place inside the tortillas and roll up ready for serving along with the Tomato Salsa and salad. Tomato Salsa recipe shown below.
Tomato Salsa Recipe
Ingredients to serve 4 1 tomato, finely chopped 1 red onion finely sliced 3 tablespoons lemon juice 2 table spoons chopped fresh coriander 2 teaspoons grated lemon zest (lemon peel)
Instructions Mix all ingredients thoroughly in a medium bowl. Can be used as a filling or side dish with Burritos. Can be used as a part of the filling for Tacos. Also, used as a sauce with meat, chicken or seafood dishes.
Spicy Beef and Bean Tacos
Ingredients to serve 4 2 teaspoons olive oil 250g (8oz) minced beef 1 small onion, finely chopped ¼ teaspoon chili powder ¼ cup tomato paste 1 teaspoon ground cumin 1 teaspoon ground coriander 440g (14oz) can refried beans 12 taco shells ½ cup grated cheddar cheese 2 small carrots, grated 2 tomatoes, sliced ½ small lettuce shredded
Instructions In a frying pan heat oil and add mince and onion. Cook on medium heat for 5 minutes or until well browned and most of the liquid has evaporated.
Add chili powder, tomato paste, cumin, coriander and refried beans. Mix these ingredients thoroughly into the mince. Stir regularly for 3 minutes or until mixture is hot and well blended.
Heat taco shells in the oven for about 8 minutes until they are crisp. (Preheated oven 180C / 350F)(Refer instructions on packet). (Place the shells over the rungs of the oven rack to prevent them from closing up).
Fill shells with mince mixture, carrot, tomato, lettuce and cheese.
Sour cream or tomato salsa can also be added.
