To obtain the maximum health benefits from herbs, we need to be cooking with fresh herbs.If we are fortunate to be living in a country and environment where we can go out into our garden and pick fresh herbs we have a major advantage as over time the herbs give up their benefits like a battery slowing running flat. Dr Keller, advises "Its a bad sign if the herbs are lying in bins in the store's front window, with the sun puring in, since herbs lose their potency when exposed to light and air. Before buying herbs, put your nose to work. Fresh herbs should smell fresh. Don't buy herbs that smell musty or look moldy, dry or discolored." Also, remember once you get home from the shop, store the herbs in an airtight container in a cool, dark place like your kitchen cupboard away from the stove.
